LUSTFUL LEMON LOAF 1 medium lemon 2 and a quarter cups all-purpose flour 1 and a half teaspoons double-acting baking powder three quarter teaspoon salt 1 and a half cups sugar three quarter cup butter or margarine 2 eggs half a cup milk 1. Preheat oven to 350F. From lemon, grate 1 tablespoon peel and squeeze out juice (about 9 teaspoons). Set aside. Grease 9" by 5" loaf pan. 2. In large bowl with fork, mix flour, baking powder, salt and sugar. With pastry blender or two knives used scissor-fashion, cut in butter until mixture resembles coarse crumbs. Stir in peel. 3. In a small bowl with fork, beat eggs slightly and stir in milk; then stir this mixture into flour mixture just until flour is moistened. 4. Spoon into pan. Bake 1 and a quarter hours. Cool in pan on wire rack 10 minutes; remove from pan (carefully!) 5. In 1-quart saucepan over medium-high heat, heat lemon juice and sugar to boiling(for 9 teaspoons of lemon juice add 4 tablespoons sugar). Cook, stirring, until slightly thickened, 5-10 minutes. With pastry brush, brush sugar mixture evenly over top and sides of bread. Serve warm or serve cool. Eat. Amen.
